A 170mm Japanese Santoku knife from Sakai Takayuki, designed as an all-purpose blade for everyday preparation across meat, fish and vegetables.
The blade is crafted from Böhler N685 stainless steel, offering a refined balance of sharpness, durability and ease of maintenance. A 45-layer Damascus cladding creates a distinctive hamon-style wave pattern, adding depth while supporting corrosion resistance.
Finished with a traditional Wa-handle in rosewood and ebony, the knife feels lightweight, balanced and comfortable in hand, making it well suited to both precise slicing and general kitchen use.
Handcrafted in Sakai, Japan, each piece reflects the skill and heritage of Japanese knife-making.

Wash with dishwashing detergent, wipe dry and allow to dry.
You can keep it clean by disinfecting it with alcohol or boiling water.
If you will not be using it for a long period of time, wrap it in newspaper and store it in a well-ventilated place.
Regular sharpening
Sharpening stone : Japanese knives (single-edged) can be kept sharp by regularly sharpening them with a sharpening stone.
Sharpener : Western knives (double-edged) can be easily maintained with a sharpener or filing stick.
